A Simple Carrot Cake Recipe
This simple carrot cake recipe is just right for beginners. This is a good example of how a cake mix can be the beginning of a great cake, rather than the whole story. Use a canned cream cheese frosting on top, or whip some heavy cream with your electric beaters and white sugar to taste.
Warning: do NOT use these cooking oils!

Simple Carrot Cake Recipe. How simple can it be?
Ingredients
- 1 box yellow cake mix
- 2 teaspoons (10 mL) cinnamon
- 1 cup (250 mL) sour cream
- 3 eggs
- 1/2 cup (125 mL) applesauce
- 2 cups (500 mL) finely shredded carrots
- ½ cup (125 mL) chopped walnuts
- ¼ cup (60 mL) powdered sugar
Directions
Preheat oven to 350°F (180° C).
Butter a round cake pan. In a mixing bowl, whisk together cake mix and cinnamon.
In a second bowl, blend eggs and applesauce until thoroughly combined.
Add dry ingredients to wet ingredients. Add shredded carrots and walnuts and stir. Transfer the batter to the prepared pan. Bake for 45-50 minutes. While cake is cooling, sprinkle top evenly with powdered sugar. Decorate with nuts and carrot curls if desired. Serve warm or cool.
