Parmesan Herb Recipes Carrots and Rice

Ingredients

  • 6 ounces (175 g) peeled and finely chopped carrots
  • 2 tablespoons (30 mL) butter
  • 1 cup (250 mL) rice
  • 1 1/2 cups (375 mL) water
  • 1 1/4 cups (300 mL) chicken broth
  • 1 large garlic clove, minced
  • 1/4 cup (60 mL) grated Parmesan cheese
  • 2 tablespoons (30 mL) chopped green onions
  • 1 teaspoon (5 mL) minced fresh parsley
  • Salt and pepper

Directions

Melt the butter in a saucepan over medium heat.

Add rice and carrots; sauté until rice is golden, about 5 minutes.

Add water, broth, and garlic; simmer uncovered over medium heat until all liquid is absorbed, stirring frequently, about 10 minutes. Stir in cheese, green onions, and parsley. Season with salt and pepper and serve.
