A Winning Salad Recipe: Carrot Salad with Chives and Almonds
This carrot salad is quick and easy to throw together, but it tastes like it took half the afternoon! Keep this recipe on tap for nice dinners on short notice or unexpected company.
Warning: do NOT use these cooking oils!

Recipe: Carrot Salad with Chives and Almonds
Ingredients
- 2 tablespoons (30 mL) fresh lemon juice
- 1 teaspoon (5 mL) honey
- 3 tablespoons (45 mL) extra virgin olive oil
- 3/4 cup (175 mL) plain yogurt
- 3 cups (750 mL) shredded carrots
- 1/4 cup (60 mL) minced chives
- 1/4 cup (60 mL) sliced toasted almonds
Directions
Whisk lemon juice and honey together in a serving bowl.
Gradually whisk in oil, then yogurt. Add carrots and chives, then toss. Sprinkle toasted almonds over salad and serve immediately.
