Try This Recipe: Carrot Cake For Everyone!
Not everyone likes raisins and not everyone likes nuts, but everyone loves this carrot cake recipe! The smooth texture, rich spices, and bright orange taste make it a winner with young and old.
Warning: do NOT use these cooking oils!

Carrot Cake for Everyone
Ingredients
Cake
- 2 cups (500 mL) unbleached all purpose flour
- 2 teaspoons (30 mL) baking soda
- 2 teaspoons (30 mL) baking powder
- 2 teaspoons (30 mL) ground cinnamon
- 2 teaspoons (30 mL) ground cloves
- 1/2 teaspoon (2.5 mL) salt
- 4 large eggs
- 3/4 cup (175 mL) vegetable oil
- 3/4 cup (175 mL) sugar
- 2/3 cup (150 mL) packed golden brown sugar
- 1/2 cup (125 mL) orange marmalade
- 1/2 cup (125 mL) orange juice
- 3 cups (750 mL) grated peeled carrots
Frosting
- 4 8-ounce (250 g) packages cream cheese
- 2 cups (500 mL) powdered sugar
- 1 1/4 cups (300 mL) orange marmalade
- 6 tablespoons (90 mL) unsalted butter
- 2 teaspoons (10 mL) grated orange zest
Directions
Cake
Preheat oven to 350°F (180°C). Grease a cake pan and set aside. Sift first 6 ingredients into a medium bowl. Beat wet ingredients until blended. Stir in dry ingredients. Fold in carrots. Divide batter between cake pans. Bake until tester inserted into centers comes out clean, about 40 minutes.
Frosting
Beat cream cheese and sugar together until smooth. Add marmalade, butter, and orange zest and beat just until completely combined.
