Honey, raisins, spices, and melted butter are elements of old fashion carrot cake recipes that never go out of style. This recipe is eggy and rich, perfect for the holidays! Because it is so rich, this cake is best served with a light dusting of confectioners´ sugar-more frosting than that will put you in a sugar coma before you get the presents wrapped!

Old Fashion Carrot Cake Recipes, like they used to be!
Ingredients
- 2 cups (500 mL) cake flour
- 1 ½ teaspoon (7.5 mL) ground cinnamon
- 1 teaspoon (5 mL) nutmeg
- 1 teaspoon (5 mL) allspice
- 1 teaspoon (5 mL) baking soda
- ½ teaspoon (2.5 mL) salt
- 1 ½ cups (375 mL) honey
- 1 cup (250 mL) melted butter
- 3 eggs
- 1 teaspoon (5 mL) vanilla
- 3 cups (750 mL) shredded carrots
- 1 cup (250 mL) coarsely chopped pecans
- ½ cup (125 mL) dark raisins
Directions
Preheat oven to 350°F (180° C).
Butter a cake pan. In a mixing bowl, whisk together the flour, cinnamon, nutmeg, allspice, baking soda, and salt.
In a second bowl, blend honey, melted butter, eggs, and vanilla until thoroughly combined.
Add carrots, pecans, and raisins and stir. Transfer the batter to the prepared pan. Bake for 45-50 minutes. Frost to taste and serve.
