The Best of My Low Fat Carrot Cake Recipes

Too many low fat carrot cakes recipes taste, well, low fat. This fruity, spicy cake is moist and delicious for anyone, whether they’re watching their fat intake or not.  Top it with a low-fat cream cheese frosting or a drizzle of melted dark chocolate with a garnish of carrot curls.

Ingredients

  • 2 1/2 cups (600 mL) cake flour
  • 2 teaspoons (10 mL) baking soda
  • 1 teaspoon (5 mL) cinnamon
  • 1/2 teaspoon (2.5 mL) allspice
  • 1/4 teaspoon (1.25 mL) nutmeg
  • ¼ teaspoon (1.25 mL) salt
  • 2 cups (500 mL) light brown sugar
  • 2 tablespoons (60 mL) sunflower oil
  • 1 egg
  • 2 egg whites
  • 1/2 cup (125 mL) low-fat buttermilk
  • 1 teaspoon (10 mL) vanilla
  • 3 cups (750 mL) grated carrot
  • 1 cup (250 mL) raisins
  • 1 cup (250 mL) fresh chopped pineapple

Directions

Preheat oven to 350°F (180° C).

Lightly oil a Bundt pan.   In a mixing bowl, whisk together the flour, baking soda, cinnamon, allspice, nutmeg, and salt.

Beat the oil, sugar, eggs, buttermilk, and vanilla together in a separate bowl, then mix with dry ingredients.

Stir in grated carrot, raisins, and pineapple until just combined. Transfer the batter to the cake pan.  Bake for 50-55 minutes.
