Low Fat Carrot Cake Recipe for the Whole Family

This low fat carrot cake recipe delivers all the taste and moisture you could want without as much fat as a conventional coffee cake, thanks to the addition of carrot baby food.  To keep the fat low, enjoy it plain or with a sprinkle of confectioners’ sugar.  If you decide to indulge a bit, top with slightly sweetened whipped cream!

Low Fat Carrot Cake Recipe

Low Fat Carrot Cake Recipe and tasty too!

Ingredients

  • 1 1/2 cups (375 mL) all-purpose flour
  • 1 teaspoon (5 mL) baking powder
  • 1 teaspoon (5 mL) baking soda
  • 1 teaspoon (5 mL) ground cinnamon
  • 1 teaspoon (5 mL) ground nutmeg
  • 1/2 teaspoon (2.5 mL) ground cloves
  • 1/4 teaspoon (1.25 mL) salt
  • 1 cup (250 mL) white sugar
  • 2/3 cup (150 mL) vegetable oil
  • 2 eggs
  • 1 cup (250 mL) carrot baby food
  • 1/2 cup (125 mL) chopped walnuts

Directions

Preheat oven to 350°F (180° C).

Butter a square cake pan.   In a mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.

Beat the vegetable oil, sugar, eggs, and baby food together in a separate bowl, then mix with dry ingredients.

Stir in chopped walnuts until just combined. Transfer the batter to the cake pan.  Bake for 50-55 minutes.
