Fat Carrot Cake Recipe

There are dozens of low-fat carrot cake recipes out there... this one is the opposite! Our fat carrot cake recipe won’t help you take the pounds on, but it will make your tastebuds explode. Make this one when you want to impress the guests.

Fat Carrot Cake Recipe

Ingredients

Cake

  • 1 1/2 cups (350 mL) safflower oil
  • 4 large eggs
  • 2 1/2 cups (600 mL) flour
  • 2 1/4 cups (550 mL) sugar
  • 2/3 cup (150 mL) melted chocolate
  • 2 teaspoons (10 mL) baking soda
  • 1 teaspoon (5 mL) salt
  • 2 cups (500 mL) finely grated carrots
  • 1 cup (250 mL) shredded coconut
  • 1 1/2 teaspoons (7.5 mL) orange juice concentrate

 

Frosting

  • 2 1/2 cups (600 mL) semisweet chocolate
  • 1 cup (250 mL) unsalted butter
  • 1/3 cup (75 mL) powdered sugar
  • 1/4 cup (60 mL) orange juice concentrate
  • A can of mandarin orange segments, patted dry

Directions

Cake

Preheat oven to 350°F (180°C). Grease two cake pans or a cupcake tin and set aside. Beat oil and eggs together until well blended, then add flour, sugar, baking soda and salt. Stir in carrots, coconut, melted chocolate, and orange juice concentrate. Divide batter between prepared pans.

Bake cakes until tester inserted into center comes out clean, about 40 minutes for cake pans or 25 minutes for muffin tins. Cool cakes in pans 10 minutes. Turn out onto racks; cool completely.

Frosting

Stir chocolate in a heavy saucepan over very low heat until melted and smooth. Remove from heat and cool to lukewarm. Beat butter and sugar in a medium bowl until fluffy. Beat in melted chocolate and orange juice concentrate. Cool, then frost, then decorate with mandarin orange segments.
