Cooked Carrots Recipes with Cornbread Topping
Ingredients
- 4 pounds (2 kg) large carrots, peeled, cut into thin rounds
- 1/4 cup (125 mL) butter
- 1/2 medium chopped onion
- 1 cup (250 mL) chopped celery
- 1 cup (250 mL) coarsely grated cheddar cheese
- 1 tablespoon (15 mL) all purpose flour
- 1 cup (250 mL) whipping cream
- 1/3 cup (75 mL) crumbled corn bread
Directions
Preheat oven to 400°F (200°C) and butter a baking dish.
Steam carrots until almost tender, about 15 minutes. Transfer carrots to the dish. Melt butter in heavy medium skillet over medium-high heat. Add onion and celery and sauté for five minutes, then add them to baking dish. Combine cheese and flour evenly in a mixing bowl, then add cream and stir. Pour cheese mixture into carrot mixture and combine evenly. Sprinkle crumbled cornbread on top. Bake carrots, uncovered, for 25 minutes.
