Carrot Souffle Recipe

This flavorful carrot soufflé is what the Easter Bunny has to celebrate delivering all the baskets!  Make this treat for your family at Easter or anytime.  If you can find them, try this recipe with purple carrots for a lovely color.  If you prefer a savory soufflé, simply leave out the sugar and vanilla and add your favorite spices instead.


Warning: do NOT use these cooking oils!

Carrot Souffle Recipe

Ingredients

  • 1 pound (500 g) carrots, coarsely chopped
  • 1/2 cup (125 mL) butter
  • 1 teaspoon (5 mL) vanilla
  • 3 eggs
  • 3 tablespoons (45 mL) flour
  • 1 teaspoon (5 mL) baking powder
  • 1/2 teaspoon (2.5 mL) salt
  • 3/4 cup (175 mL) sugar

Directions

Preheat oven to 350°F (180°C). Butter a casserole dish and set aside. 

Bring a large pot of salted water to a boil. Add carrots and cook until tender, 15 to 20 minutes.

Drain the carrots and return them to the pot.  Add butter, vanilla, and eggs and mash them thoroughly.  In a separate bowl, whisk together flour, baking powder, salt and sugar.  Stir dry ingredients into the carrot mixture and combine until the mixture is smooth, then transfer to the prepared casserole dish.  Bake for 45 minutes.
