Carrot Salad Recipes

Carrot Salad with Dill and Pecans
Ingredients
- 2 tablespoons (30 mL) fresh lemon juice
- 1 teaspoon (5 mL) honey
- 3 tablespoons (45 mL) extra virgin olive oil
- 3/4 cup (175 mL) Greek yogurt
- 3 cups (750 mL) coarsely grated peeled carrots
- 1/4 cup (60 mL) chopped fresh dill
- 1/4 cup (60 mL) pecan pieces
Directions
Whisk lemon juice and honey together in a serving bowl.
Gradually whisk in oil, then yogurt. Add carrots and dill, then toss. Sprinkle pecan pieces over salad and serve immediately.
