Try This Carrot Recipe: Salad with Curry and Mint

I don't know who first came up with the idea of blending curry powder with carrots, but I know that she deserves a special award. This curried carrot salad adds a kick that balances nicely against the sweet, chewy raisins. Bring it to a potluck and stand out above the crowd!


Warning: do NOT use these cooking oils!

Carrot Recipe Salad

Curry Carrot Salad

Ingredients

  • 3/4 cup (175 mL) plain yogurt
  • 1 large green onion, minced
  • 2 tablespoons (30 mL) minced fresh mint
  • 1 1/2 teaspoons (7.5 mL) fresh lemon juice
  • 1 teaspoon (15 mL) curry powder
  • 1 pound (500 g) carrots, peeled and grated
  • 1/4 cup (60 mL) raisins
  • Salt and pepper to taste

Directions

Whisk first 5 ingredients together in a large bowl.

Add carrots and raisins; toss to coat. Season to taste with salt and pepper.
