Try This Carrot Recipe: Salad with Curry and Mint
I don't know who first came up with the idea of blending curry powder with carrots, but I know that she deserves a special award. This curried carrot salad adds a kick that balances nicely against the sweet, chewy raisins. Bring it to a potluck and stand out above the crowd!
Warning: do NOT use these cooking oils!

Curry Carrot Salad
Ingredients
- 3/4 cup (175 mL) plain yogurt
- 1 large green onion, minced
- 2 tablespoons (30 mL) minced fresh mint
- 1 1/2 teaspoons (7.5 mL) fresh lemon juice
- 1 teaspoon (15 mL) curry powder
- 1 pound (500 g) carrots, peeled and grated
- 1/4 cup (60 mL) raisins
- Salt and pepper to taste
Directions
Whisk first 5 ingredients together in a large bowl.
Add carrots and raisins; toss to coat. Season to taste with salt and pepper.
