Carrot Raisin Salad Recipe
Luscious, tangy, and moist, this carrot raisin salad recipe is guaranteed to be a hit at your next get together. The yogurt is a better choice than mayonnaise for an event, and just as yummy! Cashews add an extra note of richness that help it stand above other carrot salad recipes.

Carrot Raisin Salad Recipe
Ingredients
- ¾ cup (175 mL) Greek yogurt
- 1 tablespoon (15 mL) honey
- 1 tablespoon (15 mL) lime juice
- 1 tablespoon (15 mL) orange juice concentrate
- Zest of an organic orange
- ¼ teaspoon (1.25 mL) salt
- 8 carrots, peeled and coarsely shredded
- ¼ cup (60 mL) raisins
- 1/3 cup (75 mL) chopped cashews
Directions
Combine yogurt, honey, lime juice, orange juice concentrate, zest, and salt in a mixing bowl.
Toss well, then add carrots, raisins, and cashews. Mix to combine, refrigerate for at least an hour, and serve.
