Carrot Muffins Recipe

Shredded coconut, apples, pecans, and raisins fill these muffins with flavor and nutrition. Toss one in your child's backpack to keep her energy up throughout the school day, or put one in your purse and do the same!


Warning: do NOT use these cooking oils!

Carrot Muffins Recipe

Ingredients

  • 2 cups (500 mL) all-purpose flour
  • 2 teaspoons (10 mL) baking soda
  • 2 teaspoons (10 mL) cinnamon
  • 1 teaspoon (5 mL) nutmeg
  • 1/4 teaspoon (1.25 mL) salt
  • 1 1/4 cups (300 mL) brown sugar
  • 1/4 pound (125 g) shredded carrots
  • 1/2 cup (125 mL) ground pecans
  • 1/2 cup (125 mL) raisins
  • 1/4 cup (60 mL) shredded coconut
  • 3 large eggs
  • 1 cup (250 mL) sunflower oil
  • 2 teaspoons (10 mL) vanilla
  • 1 large, firm-fleshed apple (Granny Smith or Honeycrisp), peeled and shredded 

Directions

Preheat oven to 350°F (180°C) and butter a muffin tin.

Whisk together flour, baking soda, cinnamon, nutmeg, and salt in a mixing bowl.

Add carrots, pecans, raisins, and coconut and blend thoroughly.

In a separate bowl, whisk together brown sugar, eggs, oil, and vanilla. Combine both bowls, add shredded apple, and stir until just combined.   Divide batter among muffin cups and bake until a tester comes out clean, 15 to 20 minutes.
