Ingredients

  • 2 cups (500 mL) all purpose flour
  • 1 teaspoon (5 mL) baking soda
  • 3/4 teaspoon (3 mL) salt
  • 3/4 teaspoon (3 mL) ground cinnamon
  • 1/2 teaspoon (2.5 mL) ground cloves
  • 1 cup (250 mL) golden brown sugar
  • 1 cup (250 mL) butter at room temperature
  • 4 large eggs
  • 2 cups (500 mL) coarsely grated peeled carrots
  • 3 tablespoons (45 mL) fresh lime juice
  • 2 teaspoons (10 mL) grated lime peel

Directions

Preheat oven to 350°F (180°C).

Butter a muffin tin. Sift first 5 ingredients into medium bowl. Using electric mixer, beat sugar and butter in a large bowl until fluffy.

Beat in eggs. Add sifted dry ingredients and beat until blended. Stir in carrots, lime juice, and lime peel. Spoon batter into muffin tin. Bake muffins until tester inserted near center comes out clean, about 20 minutes.
