Carrot Casserole Recipes
Ingredients
- 8 large carrots, peeled and grated
- 2 large yams, peeled and grated
- 2/3 cup (150 mL) raisins
- 1/2 cup (125 mL) butter
- 2/3 cup (150 mL) dark brown sugar
- 4 large eggs
- 1 1/4 teaspoons (6.25 mL) salt
- 1 teaspoon (5 mL) baking powder
- 1 teaspoon (5 mL) ground cinnamon
- ½ teaspoon (2.5 mL) ground nutmeg
- ½ teaspoon (2.5) ground allspice
Directions
Preheat oven to 350°F (180°C) and butter a square baking dish.
Combine carrots, yams, and raisins in large bowl. Melt butter in heavy medium saucepan over low heat. Add brown sugar and whisk until sugar dissolves and mixture is smooth. Remove from heat; cool completely. Whisk eggs, salt, baking powder and spices into the butter and sugar. Pour over carrots and yams; mix well. Transfer to prepared dish.
Bake for 90 minutes, or until vegetables are tender with a golden brown crust.
