Carrot and Raisin Salad Recipe

This solid, classic carrot and raisin salad recipe belongs in the center of the picnic table. It's a terrific alternative to mayonnaise-based carrot salads, which can go bad if left out for long. Low in fat and high in nutrition, it's a hit with carrot fans young and old!


Warning: do NOT use these cooking oils!

Carrot and Raisin Salad Recipe

Ingredients

  • 3 large carrots, shredded
  • 1 tablespoon (15 mL) extra virgin olive oil
  • 2 teaspoons (10 mL) lemon juice
  • 1/4 teaspoon (1.25 mL) salt
  • ½ cup (125 mL) raisins
  • 1 1/2 tablespoons (23 mL) chopped walnuts, lightly toasted 

Directions

Toss all ingredients together in a serving bowl until thoroughly combined; serve immediately.
