Cake, Carrot, Recipe, Vegan?  Combine Them All and Get Delicious!

Is it a cake, carrot recipe, vegan dessert, or none of the above?  You’ll have to taste it to cast your vote!  Regardless of which choice you make, you’ll agree that it’s delicious!  If desired, toss some chopped mixed nuts with warm honey to make a streusel topping.

Cake Carrot Recipe Vegan

Ingredients

  • 3 cups (750 mL) flour
  • 1 ½ teaspoon (7.5 mL) baking soda
  • 2 teaspoons (10 mL) cinnamon
  • 1 ½ teaspoon (7.5 mL) allspice
  • ½ teaspoon (2.5 mL) cloves
  • ½ teaspoon (2.5 mL) salt
  • 2 cups (500 mL) water
  • 1 cup (250 mL) soy milk
  • 1 cup (250 mL) sugar
  • ½ cup (125 mL) grated coconut
  • 2 cups (500 mL) shredded carrots

Directions

Preheat oven to 350°F (180° C).

Lightly oil a round cake pan. In a mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, allspice, cloves, and salt.

Add water, soy milk, and sugar and mix until thoroughly combined.  Add coconut and carrots and stir.  Transfer the batter to the prepared pan.  Bake for 50-55 minutes.
