Eating Healthy but Want Cake? Carrot-Healthy Recipe is the Answer!
Cashews and fresh pineapple in this cake, carrot-healthy recipe make all the difference. Even though the olive oil is a little unusual for a cake, it works wonderfully with the hearty carrots and wheat flour. Make sure the orange juice is fresh-squeezed—it lends an entirely different taste from juice bought at the store.
Warning: do NOT use these cooking oils!

Ingredients
- 1 cup (250 mL) unbleached white flour
- 1 1/2 cups (375 mL) whole-wheat flour
- 2 teaspoons (10 mL) baking soda
- 1 teaspoon (5 mL) cinnamon
- 1/2 teaspoon (2.5 mL) ground allspice
- ½ cup (125 mL) fresh-squeezed orange juice
- 2 teaspoons (10 mL) vanilla
- 1/4 cup (60 mL) extra virgin olive oil
- 1 cup (250 mL) honey
- 1/2 cup (125 mL) fresh chopped pineapple
- 3/4 cup (175 mL) chopped cashews
- 2 cups (500 mL) firmly packed finely grated carrots
Directions
In a mixing bowl, whisk together flours, baking soda, cinnamon, and allspice.
In a second bowl, blend orange juice, vanilla, olive oil, and honey until thoroughly combined. Add dry ingredients to wet ingredients. Add pineapple, cashews, and carrots, and stir. Transfer the batter to the prepared pan. Bake for 45-50 minutes. Serve warm or cool.
