The Best Carrot Cake Recipe
The name says it all in this case... I think this is the best carrot cake recipe to ever come through our test kitchen. The orange marmalade is the secret. Nobody who tastes it will guess that there are preserves in the batter—they’ll just think you’re a genius!
Warning: do NOT use these cooking oils!

The Best Carrot Cake You’ve Ever Had
Ingredients
- 2 cups (500 mL) flour
- 2 teaspoons (10 mL) baking soda
- 2 teaspoons (10 mL) baking powder
- 2 teaspoons (10 mL) ground cinnamon
- 1/2 teaspoon (2.5 mL) salt
- 4 large eggs
- 3/4 cup (175 mL) vegetable oil
- 3/4 cup (175 mL) sugar
- 2/3 cup (150 mL) packed golden brown sugar
- 1/2 cup (125 mL) orange marmalade
- 1/2 cup (125 mL) orange juice
- 3 cups (750 mL) grated peeled carrots
- 3/4 cup (175 mL) chopped toasted walnuts
Directions
Sift dry ingredients into medium bowl. Beat eggs, oil, sugars, marmalade and juice in a large bowl until well blended.
Add dry ingredients, then fold in carrots and nuts. Divide batter between cake pans. Bake until tester inserted into centers comes out clean, about 40 minutes.
Turn out cakes onto racks and cool completely.
