Baby Food Carrot Cake Recipe

Who knew that a baby food carrot cake recipe could have such a sophisticated taste?  This cake makes a great choice for a mixed-age crowd, as toddlers and seniors alike ask for more.  Try substituting chopped dried apricots or prunes for the raisins for a little variety in taste and nutrition.


Warning: do NOT use these cooking oils!

Baby Food Carrot Cake Recipe

Baby Food Carrot Cake Recipe, every baby deserves carrots!

Ingredients

  • 3 cups (750 mL) flour
  • 2 teaspoons (10 mL) baking soda
  • 3 teaspoons (15 mL) baking powder
  • 2 teaspoons (10 mL) cinnamon
  • 1 teaspoon (5 mL) salt
  • 2 cups (500 mL) sugar
  • 1 ½ cups (375 mL) carrot baby food
  • 4 eggs
  • 1 1/2 cups (375 mL) oil
  • 1/2 cup (125 mL) sliced almonds
  • ½ cup (125 mL) dark raisins

Directions

Preheat oven to 350°F (180° C). Butter a loaf pan.   In a mixing bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.

Beat the sugar, baby food, eggs, and oil together in a separate bowl, then mix with dry ingredients.

Stir in sliced almonds and raisins until just combined. Transfer the batter to the loaf pan.  Bake for 50-55 minutes.
