The Best of My Baby Carrot Recipes
Baby Carrot Recipes: Orange juice combines with butter and sugar to make a sweet, syrupy glaze on baby carrots and sugar snap peas that can't be beat! Serve this dish with rice and a pork roast to allow all the flavors to complement each other (and to make sure you have something that can soak up the extra sauce -you won't want to waste it!)

Baby Carrot Recipes and Snap Peas
Ingredients
- 1/2 lb (250 g) baby carrots, peeled
- 1/4 cup (60 mL) water
- 1/2 cup (125 mL) baby sugar snap peas, strings removed
- 1 tablespoon (15 mL) fresh orange juice
- 1/4 teaspoon (1.25 mL) sugar
- 1/2 tablespoon (2.5 mL) unsalted butter
- Salt and pepper to taste
Directions
Add baby snap peas and increase heat to high, then cook until peas are crisp-tender and liquid is reduced to about 1 teaspoon, about 2 minutes.
Add orange juice, sugar, and butter, and cook until liquid is reduced to a syrupy glaze. Season with salt and pepper and serve immediately.
